Yellow Split Pea Soup


Ingredients

  • 1 lb yellow split peas
  • 1 small onion, chopped
  • 1 medium carrot, diced
  • 1 stalk celery, chopped
  • 4 cups water
  • 2 cups broth (optional - can be substituted with plain water)
  • Salt and pepper, to taste
  • 1/2 tsp. ground cumin (optional - adjust to taste)

Directions

  1. Sort and rinse peas.

  2. In a saucepan, combine all ingredients.

  3. Bring to a boil.  Reduce the heat, cover and simmer until peas are tender.

  4. Add more hot water if necessary.
