Yellow Split Pea Soup
1 lb yellow split peas
1 small onion, chopped
1 medium carrot, diced
1 stalk celery, chopped
4 cups water
2 cups broth (optional - can be substituted with plain water)
Salt and pepper, to taste
1/2 tsp. ground cumin (optional - adjust to taste)
Sort and rinse peas.
In a saucepan, combine all ingredients.
Bring to a boil. Reduce the heat, cover and simmer until peas are tender.
Add more hot water if necessary.
