Wheat Berry Soup


  • 1/2 cup wheat berries
  • 1 cup celery, chopped
  • 1 small onion, finely chopped
  • 1/2 cup carrots, sliced
  • 1 medium tomato, peeled and diced
  • 2 cups cooked chicken, diced (optional)
  • 1 tsp. tomato paste (optional)
  • 4 cups chicken or beef stock
  • 4 cups water
  • Salt and pepper, to taste


  1. Soak the wheat berries for at least 8 hours or overnight. 

  2. In a large saucepan, combine the wheat berries, celery, carrots, onions, tomatoes, stock and 2 cups water.  Bring to a boil.  Lower the heat to medium and simmer for one hour. 

  3. Add remaining water, tomato paste, salt, pepper and diced chicken (optional) and continue to simmer for 30 minutes or until the wheat berries are well cooked.
