Tabbouleh Recipe


Ingredients

  • 3 cups finely chopped flat leaf parsley
  • 2-3 spring onions, finely chopped
  • 1/4 cup fresh mint leaves, finely chopped
  • 1 large tomato, finely chopped
  • 2 green chili peppers, finely chopped (optional)
  • 2 tbsp. cracked wheat (bulgur)
  • Lemon juice, to taste
  • Salt, to taste
  • 2-3 tbsp. olive oil

Directions

  1. Finely chop the parsley, mint, spring onions, chili peppers and tomato.

  2. Rinse the crushed wheat and drain well then soak in 2 tbsp. of lemon juice for 30 minutes.

  3. In large mixing bowl, combine all the ingredients including the crushed wheat and the lemon juice.

  4. Season with salt.
