3 cups finely chopped flat leaf parsley
2-3 spring onions, finely chopped
1/4 cup fresh mint leaves, finely chopped
1 large tomato, finely chopped
2 green chili peppers, finely chopped (optional)
2 tbsp. cracked wheat (bulgur)
Lemon juice, to taste
Salt, to taste
2-3 tbsp. olive oil
Finely chop the parsley, mint, spring onions, chili peppers and tomato.
Rinse the crushed wheat and drain well then soak in 2 tbsp. of lemon juice for 30 minutes.
In large mixing bowl, combine all the ingredients including the crushed wheat and the lemon juice.
Season with salt.
