Spinach Citrus Salad


  • 4 cups Spinach
  • 1 small red onion, sliced
  • 1 Orange, peeled
  • 1 tbsp. olive oil
  • 1 tsp. honey
  • 1 tbsp. white wine vinegar
  • 1/4 cup toasted walnuts, chopped (optional)
  • Salt, to taste


  1. In a large bowl whisk the oil, vinegar, honey and salt.

  2. Place a sieve over the same bowl. Hold a peeled orange over the bowl, and using a paring knife, cut along the membrane on both sides of each segment. Free the segments and let them fall into the sieve. Squeeze the membranes over the bowl to extract as much juice as possible, reserving the juices in the bottom of the bowl.

  3. Add the onions, orange segments and spinach to the bowl and toss to coat.  Garnish with the walnuts.

  4. Serve immediately.
