Jam Shortbread


  • 4 cups flour
  • 1 cup sugar
  • 1 cup butter or canola oil
  • 1 tsp. ground mastic (baking gum)
  • Lemon zest
  • 3 eggs
  • 2 tsp. vanilla
  • 4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 13 oz jar of jam


  1. Sift together the flour, mastic, baking powder and salt.

  2. Cream butter and sugar.  Add eggs, vanilla and lemon zest and continue beating.

  3. Add the dry ingredients and mix until they are well incorporated.

  4. Scrape the dough out onto a lightly floured surface and quickly form two balls (one just slightly larger than the other).  Wrap the smaller ball in plastic and freeze for at least 1 hour.

  5. Spread the larger ball of dough in a baking dish, top with the jam and refrigerate until the other dough is ready.

  6. Grate the smaller ball of dough on a box grater and sprinkle it on top of the jam layer.

  7. Bake in a preheated 350F oven until golden brown approx. 35 - 40 minutes.

  8. Let it cool down before cutting.
