3 cups flour
3 tbsp. oil OR ghee
1 cup water
Pinch of salt
2 lb potatoes, peeled and cubed
1/2 cup peas
1/2 cup carrots, finely chopped
1 small onion, finely chopped
1 tsp. garlic, minced
1 tsp. finely chopped fresh ginger
1 tsp. ground cardamom
1/2 tsp. turmeric
1 tsp. curry powder
1 tsp. cayenne pepper
salt, to taste
1/4 cup chopped cilantro
1 tsp. oil
In a large mixing bowl, sift the flour and salt.
Add the oil and mix then gradually add the water and knead until you get a smooth dough.
In a saucepan, heat the oil, saute the chopped onions, stir in the ginger, garlic, salt, turmeric, curry powder, cayenne pepper and cardamom.
Stir in the potatoes, peas and carrots into the onion mixture and mix well.
Leave to cool, stir in the chopped cilantro.
Roll out the dough on a lightly floured surface and cut into small circles.
Fill each circle with about 1 tbsp. of the filling and fold to form a triangle or semi-circle.
Deep fry in hot oil.
