Iraqi Sammoun Bread


  • 4 cups all-purpose flour
  • 1 1/4 cups luke warm water
  • 1 tsp. salt
  • 3 tbsp. oil
  • 2 1/2 tsp. dry yeast


  1. In a large mixing bowl, combine all ingredients.

  2. Knead by hand for around 10 minutes, adding more flour if needed.

  3. When the dough is ready (soft but not sticky), cover and let it rise for approx. 1 hour or until doubled in size.

  4. Knead the dough again and divide into 8 portions.

  5. Roll and form into shape and place on a baking sheet and let rise for a further 10 - 15 minutes.

  6. In the meantime, preheat the oven to 450 degrees F and place a wide oven proof dish full of water at the bottom of the oven to create steam which will give better results.

  7. Bake for approx. 30 - 35 minutes until they are golden brown.
