Russian Salad


  • 1 cup peas (cooked)
  • 1 cup carrots, diced and cooked
  • 1 medium potato, boiled and diced
  • 4 - 6 tbsp. mayonnaise
  • 1 tbsp. mustard
  • Salt, to taste
  • Black pepper, to taste


  1. Boil the potato in salted water with skin on, cool and dice.
  2. Blanch the peas and diced carrots and cool.
  3. In a bowl, mix the mayonnaise, mustard, salt and pepper.
  4. Add the cooled vegetables and toss to coat.
  5. Serve chilled with fish or other dishes.
