1 cup peas (cooked)
1 cup carrots, diced and cooked
1 medium potato, boiled and diced
4 - 6 tbsp. mayonnaise
1 tbsp. mustard
Salt, to taste
Black pepper, to taste
Boil the potato in salted water with skin on, cool and dice.
Blanch the peas and diced carrots and cool.
In a bowl, mix the mayonnaise, mustard, salt and pepper.
Add the cooled vegetables and toss to coat.
Serve chilled with fish or other dishes.
