Two Tone Rice
1 cup Rice
1 cup Water
1 tsp. Salt
1 tbsp. Oil
2 - 3 tbsp. saffron water
Make saffron water by grinding the saffron threads into powder using a mortar and pestle.
Dissolve in hot water, allow to rest.
Soak the rice for 20-30 minutes in hot water, then rinse well and drain.
Heat the oil in the pan add the rice and salt and stir the rice for a few seconds.
Add the water and bring to a boil, stirring occasionally.
Let water reduce to below the rice level, then lower the heat and simmer.
When the water has evaporated add the saffron water to part of the rice.
Simmer on low heat for a few more minutes.
