Potato Wedges


  • 2 medium potatoes
  • Olive oil
  • Salt
  • Crushed red pepper
  • Thyme, or your choice of herbs


  1. Thoroughly wash the potatoes, cut into wedges and soak in salted water.

  2. Drain and dry the potatoes.

  3. Cut each potato into 8 equal pieces.

  4. Drizzle with olive oil and season with red pepper flakes and thyme.

  5. Cook in a 420F preheated oven for 30-40 minutes or until potatoes are fork tender.
