2 medium potatoes
Crushed red pepper
Thyme, or your choice of herbs
Thoroughly wash the potatoes, cut into wedges and soak in salted water.
Drain and dry the potatoes.
Cut each potato into 8 equal pieces.
Drizzle with olive oil and season with red pepper flakes and thyme.
Cook in a 420F preheated oven for 30-40 minutes or until potatoes are fork tender.
