Servings: 4 - 6
4 medium potatoes
2 tbsp. finely chopped parsley
2 spring onions, finely chopped
1 rib of celery, finely chopped
1 - 2 tbsp. lemon juice or vinegar
1 tbsp. olive oil
salt and pepper, to taste
Boil potatoes, when cooled, peel and dice them.
Chop the parsley, spring onions and celery and add to the potatoes.
Mix the lemon juice or vinegar with the olive oil, salt and pepper and pour over the salad.
Toss and serve.
