2 cups cooked pasta of choice
1 cup bell peppers (red, green and yellow) diced into small pieces
3 tbsp. chopped black olives
2 tbsp. pickled cucumber, diced into small pieces
2 tbsp. chopped parsley
2 tbsp. lemon juice, adjust to taste
1 - 2 tbsp. olive oil
Salt and pepper to taste
In a large bowl, mix the lemon juice, olive oil, salt and pepper.combine
Add the pasta, bell peppers, olives, pickled cucumbers and parsley.
Lightly toss and serve.
