1 stick of butter OR 3/4 cup oil
1 cup sugar
2 tbsp. vanilla
Orange and lemon zest
1 1/2 cups orange juice
3 cups flour
3 tsp. baking powder
1/2 cup orange juice
Zest of 2 oranges (optional)
1/2 cup sugar
1/4 cup water
Preheat oven to 350 degrees F. Butter and flour a cake pan. Tap away excess flour. Set aside.
Sift the flour and baking powder and set aside.
Beat the butter OR oil and sugar until creamy.
Add the eggs, vanilla and zest and continue beating.
Stir in the orange juice and mix.
Stir in the dry ingredients and mix..
Pour the batter into the cake pan.
Bake in the preheated oven for 50 minutes, or until a wooden pick inserted into the center of the cake comes out clean.
Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
To make the syrup
place the orange juice, zest, sugar and 1/4 cup of water into a small saucepan and bring to the boil, stirring until the sugar has dissolved. Reduce the heat and simmer for 5 minutes or until thickened slightly, strain.
Use a toothpick to poke holes into the top of the cake, pour the warm, strained syrup all over the cake so that it soaks through..
