French Onion Soup
8 oz onions, sliced
1 tbsp. olive oil
2 cups low sodium beef or chicken broth
1 cup water
1 tbsp. red wine vinegar
2 slices baguette
2 slices cheese (or shredded) (Gruyere, Swiss, Mozzarella, or Provolone)
Salt and black pepper, to taste
1/4 tsp. thyme
Slice the onions. Heat oil in a saucepan, stir in the onions, season with salt and saute them until they become caramelized.
Add the water, vinegar, stock and bring to a boil. Lower the heat and simmer for 15 - 20 minutes.
When ready to serve, pour the soup into oven safe bowls, top with a toasted slice of baguette and cheese and place in the broiler until the cheese melts.
