French Onion Soup


  • 8 oz onions, sliced
  • 1 tbsp. olive oil
  • 2 cups low sodium beef or chicken broth
  • 1 cup water
  • 1 tbsp. red wine vinegar
  • 2 slices baguette
  • 2 slices cheese (or shredded) (Gruyere, Swiss, Mozzarella, or Provolone)
  • Salt and black pepper, to taste
  • 1/4 tsp. thyme


  1. Slice the onions.  Heat oil in a saucepan, stir in the onions, season with salt and saute them until they become caramelized.

  2. Add the water, vinegar, stock and bring to a boil.  Lower the heat and simmer for 15 - 20 minutes.

  3. When ready to serve, pour the soup into oven safe bowls, top with a toasted slice of baguette and cheese and place in the broiler until the cheese melts.

  4. Serve immediately.
