Minestrone Soup


Ingredients

  • 8 oz dry Cannellini Beans
  • 8 oz dry Chick Peas
  • 1 medium onion, chopped
  • 1/2 cup carrots, diced
  • 1 cup zucchini, diced
  • 1 clove garlic, minced
  • 1/2 cup peas or cut green beans
  • 1 cup tomatoes, diced
  • 1 tbsp. olive oil
  • Salt and Pepper, to taste

Directions

  1. Soak beans, chick peas and drain.

  2. Combine 10 cups water and beans in a saucepan, bring to a boil and simmer 1 hour.

  3. In another saucepan, heat oil, cook the onions, carrots, zucchini and garlic until tender.

  4. Add the mixture to the beans and stir in the remaining ingredients and simmer until the beans are tender.
