3 cups flour
1 cups warm water, about 110F
2 tbsp. dry yeast
1 tsp. sugar
pinch of salt
1 tbsp. olive oil (to coat the dough)
3/4 cup olive oil (to mix with the zaatar)
9 tbsp. zaatar
Dissolve the yeast in the warm water and the sugar, let it activate for about 10 - 15 minutes.
In a large bowl, combine the sieved flour, salt and the yeast/water mixture and knead until you get a smooth dough, adding more water if needed.
Place the dough in a greased bowl and turn to coat all sides and Cover with plastic wrap or a tea towel.
Allow the dough to rise in a warm place for about 45 minutes, until doubled in size.
Roll the dough into 6 equal sized balls and let the dough rest for 15 to 20 minutes.
On a floured surface, roll the dough and transfer to a baking sheet.
Mix zaatar and olive oil together to make a runny paste. Spread the zaatar and oil paste on top of the dough and bake in a preheated oven 475F until light golden brown.
