Maarouta, المقروطة



  • 3 cups semolina
  • 1 cup flour
  • 10 oz butter
  • 2 tsp. baking powder
  • 1/2 cup orange blossom water
  • 1 lb baking dates
  • 1/2 cup water
  • 1/2 tsp. ground cinnamon, or to taste
  • 1/4 tsp. ground nutmeg, or to taste


  1. In a saucepan, melt the butter, stir in the semolina and mix well. Leave overnight.

  2. In a saucepan, cook the dates on low heat, add the ground cinnamon and nutmeg and gradually add the water stirring constantly to make a soft spreadable paste. Set aside to cool.

  3. Add the flour, yeast and orange blossom water to the semolina and knead well.

  4. Divide the dough into 4 portions. Roll into a rectangle on a floured surface.

  5. Spread the dates paste on the dough and roll into a log shape.

  6. Bake in a 350F preheated oven until the bottom of the rolls turns light golden brown. 

  7. Sprinkle with icing sugar before serving.
