3 cups semolina
1 cup flour
10 oz butter
2 tsp. baking powder
1/2 cup orange blossom water
1 lb baking dates
1/2 cup water
1/2 tsp. ground cinnamon, or to taste
1/4 tsp. ground nutmeg, or to taste
In a saucepan, melt the butter, stir in the semolina and mix well. Leave overnight.
In a saucepan, cook the dates on low heat, add the ground cinnamon and nutmeg and gradually add the water stirring constantly to make a soft spreadable paste. Set aside to cool.
Add the flour, yeast and orange blossom water to the semolina and knead well.
Divide the dough into 4 portions. Roll into a rectangle on a floured surface.
Spread the dates paste on the dough and roll into a log shape.
Bake in a 350F preheated oven until the bottom of the rolls turns light golden brown.
Sprinkle with icing sugar before serving.
