Maamoul


Ingredients

  • 1 kg semolina (2 lb 4oz)
  • 400gr melted butter (2 cups)
  • 1 - 2 tsp. ground mahlab
  • 6 - 8 pieces Mastic (baking gum); ground in 1 tsp. of sugar (optional)
  • 1 1/2 cups orange blossom water *
  • 1 tsp. yeast (optional)
  • 1/2 tsp. sugar (optional)
  • 1/2 cup warm water (optional)

* If yeast, sugar and water are used, the amount of orange blossom water should be reduced to 1 cup.

Walnut Filling
  • 250 gr. chopped walnuts
  • 2 tbsp. Orange blossom water
  • 4 tbsp. sugar, adjust to taste
  • cinnamon and nutmeg, to taste
Pistachio Filling
  • 250 gr. chopped pistachios
  • 2 tbsp. Orange blossom water
  • 4 tbsp. sugar, adjust to taste
  • 2 tbsp. orange blossom water

Dates Filling

  • 700 gr. pitted baking dates for each 500 gr. semolina
  • cinnamon and nutmeg, to taste

Directions

  • For the Dough:
  • In a large bowl, lightly mix the semolina, mahlab, and melted butter until it looks like coarse bread crumbs.

  • Cover and set aside for at least 12 hours, do not put in the fridge or it will be very hard to work with later.

  • Mix sugar and yeast in warm water and set aside for 10 minutes. 

  • Add the yeast mixture and orange blossom water to the semolina and knead the dough.

  • For the Walnut and Pistachio filled Maamoul

  • Mix the chopped walnuts with the sugar, honey, cinnamon and nutmeg.

  • Mix the chopped pistachios with the sugar and honey and orange blossom water.

  • Take a walnut-sized ball of the dough, hollow it out into a cup shape, making sure that the walls are as thin as possible without breaking.

  • Fill with either the walnut or pistachio filling and pinch the end to close.

  • Decorate the tops and sides of the dough by using special crimping tweezers or use a mold.

  • For The Dates Filled Maamoul

  • Mix the dates with the cinnamon and nutmeg and form into 1" rings.

  • Take a walnut-sized ball of the dough, flatten it, put the ring shaped dates on top of the dough and wrap the dough around the dates, forming a small ring shaped cookie.

  • Decorate the top and size using crimping tweezers.

  • Place all the maamoul on a baking sheet and leave to rest for 15 minutes before baking.

  • Bake in a 450 degrees F oven for about 10 - 15 minutes (until the bottom of the maamoul turns light golden color).  Do not over bake.

  • Allow to cool.

  • Dust with icing sugar before serving.
