Easy, Vegan Lentil Soup


Ingredients

  • 1 cup red lentils
  • 1 mdium onion, chopped
  • 3 cups water
  • ¼ tsp. turmeric
  • 1 tsp. cumin
  • Salt, to taste
  • Lemon juice, to taste

Directions

  1. Wash and drain the lentils.

  2. Chop the onion.

  3. In a saucepan combine the lentils, onions, cumin, salt and water.

  4. Bring to a boil.

  5. Puree with a hand blender and simmer for 15 minutes.

  6. Serve with fried or toasted pita chips and lemon juice.
