Kaek Ajweh


Ingredients

  • 4 cups flour
  • 1 1/2 cups butter, melted
  • 1 tsp. ground Mahlab
  • 6 - 8 pieces Mastic (baking gum); ground in 1 tsp. of sugar
  • Luke warm water, as needed
  • 2 packets baking dates (13 oz each)

Directions

  1. Preparing the Dough:  Sift flour and mix with the ground mahlab and mastic.

    Pour the cooled melted butter and mix well.  Add water gradually while kneading.

  2. Making the Kaek:  There are two ways of making the kaek.

    Method 1:  Form the dates into 1" rings.  Take a walnut-sized ball of the dough, flatten it, put the ring shaped dates on top of the dough and wrap the dough around the dates, forming a small ring shaped cookie as shown in the picture below.

    Method 2: Roll the dates into long ropes and wrap the dough around it and cut diagonally into 1 or 2 inch pieces as shown in the picture below.

  3. Bake in a 450 degrees F preheated oven for about 10 - 15 minutes until the bottom of the cookies turn golden brown.
