Iraqi Kabab, كباب عراقي Yield: 13 skewers

Iraqi Kabab


  • 2 lb ground meat (beef, lamb or a mixture of both)
  • 1 large onion
  • 2 oz bread, soaked in water
  • 4 tbsp. ground summac
  • 1 tsp. salt
  • 1 tsp. black pepper, adjust to taste


  1. Mince the onion in a food processor.

  2. Soak the bread in water. When softened, squeeze out excess water.

  3. In a large mixing bowl, combine the ground meat, summac, salt, minced onions and soaked bread and mix by hand until well incorporated.

  4. Take 4 oz portions of the meat mixture and shape on a skewer.

  5. Cook on a grill or in a preheated 350F oven for one hour or until done, turning the kebabs half way through cooking.
