Green Lentil Soup
1 cup mung beans
1 large onion
1 tbsp. cooking oil
1 tsp. ground cumin, adjust to taste
Salt and black pepper, to taste
Pick the mung beans, then thoroughly rinse and soak them for 30 minutes.
Drain, cover with water and bring to a boil. Season with salt, pepper and ground cumin. Lower the heat and simmer until the beans are done.
Puree the mung beans and add water if needed to reach the desired thickness.
Fry the sliced onions until they caramelize. Add half of them to the mung beans and simmer.
Serve topped with the remaining fried onions.
