Green Bean Stew
3/4 lb green beans, trimmed and cut to 1" lengths
1/2 lb stewing meat (beef or lamb), cubed
1 tbsp. olive or canola oil
1 medium onion, finely chopped
2 cloves garlic (optional)
2 tbsp. tomato paste
1 tsp. ground allspice
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/2 tsp. ground black pepper
Salt, to taste
Season the meat with allspice, cinnamon, nutmeg, salt and black pepper.
Heat oil in a saucepan and brown the meat. Remove the meat and set aside.
In the same saucepan, add the chopped onions and cook until tender.
Return the meat to the saucepan, add the beans, and stir fry for a few minutes.
Stir in the tomato paste and stir fry for a few more minutes.
Cover with water, bring to a boil then simmer for about one hour or until the beans are tender.
Serve hot with plain or vermicelli rice.
