Greek Salad


  • 2 large plum tomatoes, cut into wedges
  • 2 small cucumbers, sliced
  • 1/2 small red onion, cut into thin rings
  • 1 cup bell peppers (one or more colors), cut into bite size pieces
  • 1/2 cup kalamata olives, pitted
  • 1/2 cup feta cheese
  • 2 tbsp. chopped fresh mint (optional)
  • 1/2 tsp. dried oregano
  • 4 tbsp. olive oil
  • 1 - 2 tbsp. lemon juice
  • Salt, to taste (salt may not be needed as the cheese and olives are salty enough)


  1. In a large bowl, mix the oil, lemon juice, oregano and salt.

  2. Combine all the salad ingredients except the cheese and toss to coat dressing.

  3. Top with the diced cheese and serve as a side dish or light meal with crusty bread.
