Freekeh Soup


  • 1 cup Freekeh (Smoked Green Wheat)
  • 8 - 10  cups chicken or beef broth
  • 1 tbsp. cooking oil
  • 1 small onion, finely chopped
  • Salt and pepper, to taste
  • Cooked chicken (cut into small pieces) or Fried small Kubbeh


  1. Thouroughly rinse the freekeh, soak for 30 minutes and drain.

  2. Heat oil, saute chopped onions.  Add the freekeh and stir fry for a few minutes.

  3. Add the broth and cooked chicken or fried kubbeh and bring to a boil.  Lower the heat and simmer until the freekeh is done.

  4. Serve hot.
