Freekeh and Chicken
2 boneless skinless chicken breasts
1 cup freekeh (roasted green wheat)
1 tbsp. canola oil
Salt, to taste
1/2 tsp. ground cinnamon
1/4 tsp. nutmeg
2 tbsp. pine nuts
Thouroughly rinse the freekeh and soak for 30 minutes.
In a saucepan, heat 1 tbsp. oil and fry the pine nuts. Remove and set aside.
Season the chicken with cinnamon, nutmeg and salt.
In the same saucepan, fry the chicken breasts. Remove from saucepan and set aside.
Drain the freekeh and add into the saucepan, stirring for a few minutes.
Add 2 cups of water and salt and bring to a boil.
Lower to medium heat and cook until most of the water is absorbed.
Return the chicken on top of the freekeh. Lower the heat to low and leave until the freekeh is fully cooked.
Garnish with the pine nuts and serve with yoghurt or salad.
