Fava Bean Salad (Foul Mudammas)


  • 1 lb Dry Fava Beans
  • 3 - 4 cloves of garlic, crushed
  • Juice of 1 lemon (adjust to taste)
  • 1 tomato, diced (for garnish)
  • 1 tbsp. chopped parsley (for garnish)
  • 1/2 tsp. ground cumin, adjust to taste
  • Olive oil
  • Salt, to taste


  1. Soak the dry fava beans for a few hours or overnight.

  2. Cook the fava beans over medium heat for 1 - 2 hours until tender.  Drain most of the water and mash slightly. Add the crushed garlic, lemon juice, salt, cumin and mix well.  Transfer to serving bowl and garnish with the diced tomatoes, chopped parsley and drizzle with olive oil.

  3. Serve warm with pita bread, onions and pickles.
