Baked Fish Packets


Ingredients

  • 2 6oz Fish Fillets
  • 1 small/medium onion, julienned
  • 4-6 tbsp. parsley, chopped
  • Salt and black pepper, to taste
  • Zest of 1 lemon
  • 1 lemon, sliced
  • Summac, to taste
  • Olive Oil
  • 2 pieces of foil or parchment paper

Directions

  1. Place 2-3 slices of lemon in the center of each piece of foil or parchment paper; 3" larger on each side than the fish.

  2. Drizzle olive oil on both sides of the fish and season with salt, pepper, lemon zest and place on top of the lemon slices.

  3. Combine the sliced onions parsley, olive oil, summac and mix until well incorporated. 

  4. Top the fish with the onion mixture.

  5. Close the foil tightly and bake in a 350F pre-heated oven for 30 - 40 minutes or until the fish is done and flaky.
