Fennel Citrus Salad


  • 1 bulb Fennel, sliced
  • Green part of the fennel
  • 1 small red onion, sliced
  • 1 red grape fruit
  • 1 orange
  • 1 tsp. mustard
  • 1 tsp. honey
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. olive oil
  • Salt, to taste
  • Pepper, to taste


  1. In a large bowl, whisk the mustard, honey, vinegar, oil, salt and pepper.

  2. Place a sieve over the same bowl. Hold a peeled orange over the bowl, and using a paring knife, cut along the membrane on both sides of each segment. Free the segments and let them fall into the sieve. Squeeze the membranes over the bowl to extract as much juice as possible, reserving the juices in the bottom of the bowl.  Repeat with the grapefruit.

  3. Add the sliced fennel, onion and the green parts of the fennel to the bowl and lightly toss.

  4. Serve chilled.
