Fava Bean Rice
1 cup rice
1 cup fava beans (skins removed)
1 small onion, finely chopped
1 cup water
2 tbsp. dill
Salt, to taste
1 tsp. canola oil
Soak the rice for 20-30 minutes in hot water, then rinse well and drain.
In a medium saucepan, heat oil and sweat the onions.
Stir in the rice and beans and keep stirring for a few minutes.
Add the water, salt and dill and bring to a boil.
Let the water reduce to below the rice level then lower heat and simmer until rice and beans are done.
Serve with grilled meat or chicken.
