Fava Bean Stew
2 - 3 lb fava beans
1 lb stewing beef
1 medium onion, finely chopped
4 tbsp. tomato paste
1 tbsp. cooking oil
Salt, to taste
Black pepper, to taste
Spices Used for cooking the meat
1 tsp. whole black pepper corns
1 tsp. whole green cardamom
1 cinnamon stick
1 bay leaf
1 - 2 cloves
Cook the meat
: In a saucepan, cover the meat with water and bring to a boil. Drain the meat, discard the water, cover the meat with fresh water again, add salt, whole black pepper corns, bay leaf, cinnamon stick, clove and green cardamom. Bring to a boil and simmer until the meat is almost done.
Wash, trim and cut the fava beans.
Heat oil in a saucepan add the onions, season with salt and cook until tender.
Stir in the fava beans and cook for a few minutes.
Stir in the tomato paste.
Add the cooked beef.
Cover with water or beef stock, bring to a boil, lower heat and simmer until the beans are tender.
Taste and re-season with salt and freshly ground black pepper.
Serve hot with plain or vermicelli rice.
