Fava Bean Stew


  • 2 - 3 lb fava beans
  • 1 lb stewing beef
  • 1 medium onion, finely chopped
  • 4 tbsp. tomato paste
  • 1 tbsp. cooking oil
  • Salt, to taste
  • Black pepper, to taste

Spices Used for cooking the meat

  • 1 tsp. whole black pepper corns
  • 1 tsp. whole green cardamom
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 - 2 cloves


  1. Cook the meat: In a saucepan, cover the meat with water and bring to a boil. Drain the meat, discard the water, cover the meat with fresh water again, add salt, whole black pepper corns, bay leaf, cinnamon stick, clove and green cardamom. Bring to a boil and simmer until the meat is almost done.

  2. Wash, trim and cut the fava beans.

  3. Heat oil in a saucepan add the onions, season with salt and cook until tender.

  4. Stir in the fava beans and cook for a few minutes.

  5. Stir in the tomato paste.

  6. Add the cooked beef.

  7. Cover with water or beef stock, bring to a boil, lower heat and simmer until the beans are tender.

  8. Taste and re-season with salt and freshly ground black pepper.

  9. Serve hot with plain or vermicelli rice.
