Chick Pea Fatteh, فتة حمص Servings: 2 - 3

Chick Pea Fatteh (Fattet Hummus)


  • 3/4 cup dry chick peas OR 2 cups already soaked chick peas
  • 2 tbsp. tahini
  • 5 cloves of garlic
  • 1 large pita bread
  • Juice of 1/2 lemon, or to taste
  • Salt, to taste
  • 1/4 cup olive oil
  • 1/4 cup pine nuts


  1. Soak the chick peas overnight.

  2. Drain and cook the chick peas in salted water.

  3. Toast the pita bread and break into small pieces.

  4. Arrange the pita bread in a serving dish and pour a little of the chick peas cooking water to soak the bread.

  5. Top the bread with about 2 tbsp. whole chick peas.

  6. In a blender, combine the remaining chick peas, tahini, lemon juice, garlic chick peas cooking water and Puree until it becomes a very smooth paste.

  7. Season the Hummus paste with salt if needed and spread on top of the soaked bread.

  8. In a skillet, heat the olive oil. Fry the pine nuts and pour the hot oil and pine nuts on top of the Hummus.

  9. Best served immediately with pickles.
