Apple Cole Slaw
1/2 small red cabbage, shredded
1/2 small green cabbage, shredded
1 large carrot, grated
1 red apple, cut into very small pieces
1 green apple, cut into very small pieces
1/3 cup mayonnaise
1 tbsp. lemon juice or white wine vinegar
1 tbsp. honey
Salt and pepper, to taste
In a large mixing bowl, combine mayonnaise, lemon juice and honey.
Add the cabbage, carrot and apples and toss to coat.
Cover and refrigerate for at least 15 minutes for the flavors to blend together.
