Coconut Cake



  • 1 cup flour
  • 1 cup sugar
  • 1 cup shredded coconut
  • 1 cup yoghurt
  • 3/4 cup oil
  • 3 eggs
  • 3 tsp. vanilla
  • 3 tsp. baking powder


  • 1 cup sugar
  • 1/2 cup water
  • 1 tbsp. lemon juice
  • 1 tsp. orange blossom water


  1. Make the syrup by dissolving 1 1/2 cups sugar with water. Bring to a boil and simmer until syrup thickens. Add lemon juice and turn off the heat.

  2. Preheat oven to 350 degrees F. Butter and flour a cake pan. Tap away excess flour. Set aside.

  3. In a mixing bowl, beat the oil and sugar.

  4. Add the eggs and vanilla; beat until thoroughly mixed.

  5. Stir in the yoghurt and coconut.

  6. Sift the flour and baking powder and add to the batter and mix.

  7. Pour the batter into the cake pan and bake for 50 minutes or until the wooden pick inserted into the center of the cake comes out clean.

  8. Pour the cooled syrup on the cake while the cake is still hot.
