Chicken and Rice Soup


Ingredients

  • 1 chicken
  • 10 cups water
  • 1 cinnamon stick
  • 2 Bay leaves
  • 1/2 tsp. whole black pepper
  • 1 tsp. whole cardamoms
  • 3/4 cup uncooked rice
  • Parsley, finely chopped
  • Salt and pepper, to taste

Directions

  1. In a large saucepan, combine the chicken, water, salt and spices and bring to a boil.

  2. Simmer until the chicken is cooked.

  3. Remove chicken and let it cool. Pull chicken meat off bones, cut to bite size pieces and set aside. 

  4. Strain the chicken broth, discarding the whole spices Add the rice and simmer until the rice is cooked.

  5. Add the chicken pieces and parsley and cook for a further 5  - 10 minutes.

  6. Serve immediately.
