Chicken Salad
Ingredients
2 cups cooked chicken, coarsely chopped
1 cup celery, sliced
3 green onions, finely chopped
2 tbsp. toasted walnuts or sliced almonds (optional)
1 tsp. lemon juice, adjust to taste
Lemon zest
3 tbsp. mayonnaise
1 tbsp. mustard
Salt and black pepper, to taste
Directions
In a large bowl, mix the mayonnaise, mustard, salt, pepper, lemon juice and zest.
Add the remaining ingredients and lightly toss to coat.
Cover and chill before serving.
