1 lb boneless skinless chicken breast cut into 1" pieces
1 large onion, finely chopped
4 cloves garlic, minced
1 tsp. ginger, minced
1 - 2 green chillis (optional)
2 medium potatoes, sliced or diced
1 tsp. ground cardamom
2 tsp. curry powder
1/2 tsp. cayenne pepper
1/2 tsp. black pepper
1/2 tsp. ground cumin
1/2 tsp. ground coriander
1 tsp. tomato paste
1 cup coconut milk
1 - 2 cups water
Season the chicken with salt and pepper and brown in hot oil for a few minutes on each side.
Remove the chicken and then add the onions to the oil and sautee until softened.
Add the garlic, green chilli, tomato paste, coconut milk, water and bring to a boil.
Blend the sauce with a hand held blender (if you like the sauce to be smooth, if not you can skip this step).
return the chicken to the pot and add the potatoes then simmer until chicken and potatoes are cooked.
Serve with basmati rice or bread.
