Butter Fish with Kabseh Rice
Flour for coating the fish
Salt and pepper, to taste
2 cups Rice
1 medium onion, finely chopped
1 tsp. ground cumin
1/4 tsp. ground dried black lime
3 tsp. ground cardamom
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 tbsp. tomato paste
2 cups water
Salt, to taste
Almonds, peeled, split and fried
Season the flour with salt and pepper and coat the fish.
Fry the fish in shallow hot oil and set aside.
Heat 2 tbsp. of cooking oil in a saucepan, and fry the almonds. Remove and set aside.
Brown the chopped onions, add the salt, spices, tomato paste and rice and cover with 2 cups water. Bring to a boil. Let the water reduce to below the rice level, lower the heat and simmer until the rice is done.
Serve the rice with the fish, topped with the fried almonds.
