Burghul Pilaf


Ingredients

  • 2 cups coarse Burghul # 3 (Cracked Wheat)
  • 1 - 2 Tbsp. Olive Oil
  • 1 medium onion, diced
  • 1 large tomato, peeled and diced
  • 2 Tbsp. tomato paste
  • 1 green bell pepper, diced
  • 1 red or yellow bell pepper, diced
  • 2 cloves garlic, minced
  • 2 green chillies, finely chopped (optional)
  • Salt and pepper, to taste
  • 2 cups water

Directions

  1. Wash Burghul by soaking in warm water, strain and set aside.

  2. Saute onions in olive oil, add the bell peppers, chillies, garlic tomatoes, tomato paste, burghul, salt and pepper.

  3. Add the water, bring to a boil.   Cover, reduce heat and let it simmer until all the water has been absorbed.  Add a little more water if needed until the burghul is tender.
