Brown Lentil Soup


  • 1 cup Brown Lentils
  • 1 medium onion, chopped
  • 2 cloves garlic, minced or crushed
  • 6 cups water
  • 1/2 cup (4 oz) fettucine (cut into 1" pieces) or any pasta of choice
  • 1/2 tsp. ground cumin
  • Salt and black pepper, to taste
  • Olive oil
  • Lemon juice, to taste


  1. Heat olive oil in a medium saucepan.

  2. Stir in the chopped onions and salt and cook the onions until they become golden brown.

  3. Stir in the garlic, lentils, cumin, black pepper and cook for a few minutes, stirring constantly.

  4. Add the water and bring to a boil. Cover, lower the heat and simmer until the lentils are almost cooked.

  5. Add the pasta and simmer until the pasta is cooked.

  6. Re-season with salt, pepper, cumin and serve.

  7. Add lemon juice, to taste.
