Brown Lentil Soup
1 cup Brown Lentils
1 medium onion, chopped
2 cloves garlic, minced or crushed
6 cups water
1/2 cup (4 oz) fettucine (cut into 1" pieces) or any pasta of choice
1/2 tsp. ground cumin
Salt and black pepper, to taste
Lemon juice, to taste
Heat olive oil in a medium saucepan.
Stir in the chopped onions and salt and cook the onions until they become golden brown.
Stir in the garlic, lentils, cumin, black pepper and cook for a few minutes, stirring constantly.
Add the water and bring to a boil. Cover, lower the heat and simmer until the lentils are almost cooked.
Add the pasta and simmer until the pasta is cooked.
Re-season with salt, pepper, cumin and serve.
Add lemon juice, to taste.
