Beetroot Salad


Ingredients

  • 3 - 4 medium beetroots
  • 2 tbsp. finely chopped parsley
  • 1-2 tbsp. lemon juice or vinegar
  • 1 tbsp. olive oil
  • Salt and black pepper, to taste

Directions

  1. Boil the beetroots, cool and dice into bite size pieces.

  2. In a large bowl, combine the beetroots, parsley, lemon juice or vinegar and olive oil, salt and pepper.

  3. Lightly toss and serve.
