Servings: 4 - 6
3 - 4 medium beetroots
2 tbsp. finely chopped parsley
1-2 tbsp. lemon juice or vinegar
1 tbsp. olive oil
Salt and black pepper, to taste
Boil the beetroots, cool and dice into bite size pieces.
In a large bowl, combine the beetroots, parsley, lemon juice or vinegar and olive oil, salt and pepper.
Lightly toss and serve.
