Arugula Mango Salad
5 oz Arugula
1 Mango, sliced
1/2 small oninon, sliced
2 tbsp. red or white wine vinegar
1 tbsp. honey
4 tbsp. grapefruit OR orange juice
1 tsp. mustard
1 tbsp. olive oil
salt and pepper, to taste
In a mixing bowl, whisk the vinegar, honey, juice, mustard, oil, salt and pepper.
Add the sliced mangos and onions.
Add the Arugula, lightly toss and serve.
