Arugula Mango Salad


Ingredients

  • 5 oz Arugula
  • 1 Mango, sliced
  • 1/2 small oninon, sliced

Citrus Vinaigrette:

  • 2 tbsp. red or white wine vinegar
  • 1 tbsp. honey
  • 4 tbsp. grapefruit OR orange juice
  • 1 tsp. mustard
  • 1 tbsp. olive oil
  • salt and pepper, to taste

Directions

  1. In a mixing bowl, whisk the vinegar, honey, juice, mustard, oil, salt and pepper.

  2. Add the sliced mangos and onions.

  3. Add the Arugula, lightly toss and serve.
