Arayes Kefta


  • 1 lb ground meat (beef or lamb)
  • 1 medium onion, grated or minced
  • 1 medium tomato, peeled, grated or minced
  • 6 - 7 loaves pita bread
  • 2 - 3 tbsp. yoghurt
  • 1 tsp. allspice
  • 1/2 tsp. cinnamon
  • 1/2 tsp. black pepper
  • 1/8 tsp. nutmeg
  • 2 tsp. salt
  • Olive or canola oil, as needed (for brushing the bread)


  1. In a food processor or on a box grater, grate or mince the onion and tomato.

  2. Mix the ground meat with the onion, tomato, salt, spices and yoghurt.

  3. Cut the pita bread into halves or quarters and spread a thin layer of the meat mixture into one side of the bread and press down to close.

  4. Brush both sides of the bread with oil and bake in a 350 degrees F preheated oven for around 45 minutes or until the meat is done and the bread is brown and crispy.  Turn once during baking.

  5. Serve warm with yoghurt and salad.
