Arabic Salad


Ingredients

  • 1 large tomato
  • 2 cucumbers
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1 - 2 green chillis (optional)
  • 2 spring onions
  • 2 tbsp. Chopped parsley
  • 2 tbsp. chopped fresh or 1 tbsp. dry mint
  • 1 tbsp. lemon juice or vinegar
  • 1 tbsp. olive oil
  • Salt, to taste

Directions

  1. Dice the tomato, cucumber, bell peppers, chillis, celery and spring onions into small pieces.

  2. Mix all the vegetables, parsley, mint, lemon juice, olive oil and salt.

  3. Toss and serve.
