Apple Galette



  • 1 1/4 cup flour
  • 4 oz butter, cut into small cubes
  • 1 tbsp. sugar
  • Pinch of salt
  • 1/4 cup ice cold water
  • 1 tbsp. milk (for brushing the dough)
  • Pinch of sugar (for sprinkling the dough before baking)


  • 2 large apples or any fruit of choice, sliced
  • 1 tbsp. brown sugar
  • lemon juice, to taste (optional)
  • Ground cinnamon, to taste
  • Ground nutmeg, to taste


  1. In a mixing bowl, combine the flour, salt and sugar and stir to blend.

  2. Add the butter and with your fingertips or a pastry blender, cut the butter into the flour mixture until they are the size of peas.

  3. Add the water and gently mix with a fork to incorporate the mixture.  The dough should hold together when pressed; if not, add a little more cold water until it does (do not overwork the dough).  When the dough is ready, gather it together and form into a disc, cover with plastic wrap and chill for at least one hour.

  4. Prepare the filling:  In a bowl, mix the sliced apples, brown sugar, cinnamon, nutmeg and lemon juice.

  5. Assembling the galette:  On a lightly floured surface, roll out the dough into an 11 - 12" disc.  Place the disc on a lightly greased baking sheet.  Arrange the prepared filling on the galette leaving a border of 1 - 2 inches on all sides.  Fold in the edges, brush it with milk and sprinkle with sugar (optional).

  6. Bake in a 400 degrees F preheated oven for 35 minutes or until the crust is golden brown and the filling is bubbly.

  7. Serve warm.
